Dark Chocolate Blueberry Ice Cream

Dark Chocolate Blueberry Ice Cream Recipe

These recipes are courtesy of Driscoll's Berries

Need to get the kids involved with cooking, try this delicious recipe, combining 2 of their favorites - chocolate and sweet berries. This treat has some sweet to it but is also healthy with the berries.

This blueberry ice cream recipe is perfect if you've never tried blueberries and chocolate together before. The creamy blueberry puree creates a delectable ice cream, made even better with chunks of dark chocolate. Take it to the next level with our quick and easy chocolate sauce.

Ice Cream

  • 2 packages (6 ounces or 1 1/4 cup each) Driscoll's Blueberries
  • 1 cup sugar
  • 1/8 teaspoons salt
  • 1 1/2 cups heavy cream
  • 1 cup whole milk
  • 1 tablespoon fresh lemon juice
  • 3 ounces bar dark chocolate, chopped into small chunks (or 1/2 cup of mini semi-sweet morsels)

  1. Mix blueberries, sugar, and salt in a heavy saucepan over medium-high heat. Stir occasionally until sugar dissolves. Bring to a boil. Reduce heat and simmer 10 minutes. Remove from heat and let cool 20 minutes. Puree in a blender. Stir puree together with heavy cream, milk and lemon juice. Chill in refrigerator overnight. Pour into an ice cream maker and freeze according to manufacturer's directions. Swirl in dark chocolate by pouring small chunks into machine during last 5 minutes of freezing

Vanilla Mascarpone Blueberry Cheesecake

Vanilla Mascarpone Blueberry Cheesecake RecipeThis rich and creamy blueberry vanilla bean cheesecake has a crust made from ground almonds, making it gluten-free. The smooth blend of cream cheese and mascarpone cheese (Italian cream cheese) has a sophisticated flavor that pairs perfectly with a topping of barely-cooked juicy blueberries. One of my favorites ;-) I love cheesecake and the mascarpone makes it so sweet.

  • 2 cups slivered almonds
  • 2 tablespoons sugar
  • 2 tablespoons unsalted butter, melted

  • 2 packages (8 ounces each) cream cheese, at room temperature
  • 2 packages (8 ounces each) mascarpone cheese, at room temperature
  • 1 1/3 cups sugar
  • 1 teaspoon vanilla extract
  • 1 vanilla bean, split and scraped
  • 4 large eggs

  • 4 tablespoons sugar
  • 2 tablespoons water
  • 2 packages (6 ounces or 1 1/4 cups each) Driscoll's Blueberries

  1. Preheat oven to 350°F. Place almonds and sugar in bowl of a food processor and process until finely ground. Combine almond mixture and butter in a medium bowl. Pack into a 9-inch non-stick springform pan (if pan is not nonstick, brush first with melted butter). Wrap pan with triple layer of heavy-duty aluminum foil, making sure that foil reaches top of side of pan. Bake until lightly golden and set, about 15 minutes. Let cool completely. Reduce oven temperature to 300°F. Fill a large saucepot with water and bring to a boil over high heat.

  1. Mix cream cheese, mascarpone, sugar, and scrapings from vanilla bean in an electric mixer on low speed until blended. Add vanilla extract. Add eggs, 1 at a time, on low speed. Pour batter into cooled crust. Place cake pan in a larger roasting pan and fill halfway up side of cake pan with boiling water. Bake 1 hour 30 minutes or until edges are set and center jiggles slightly. Remove roasting pan from oven. Remove cake pan from water bath and let cool completely on a wire rack. Place in refrigerator and chill until cold throughout, 4 to 6 hours or overnight.

  1. Bring sugar and water to a simmer in a medium saucepan over medium-high heat. Reduce heat to medium-low and add blueberries. Cook, stirring frequently, until juices release and thicken and blueberries soften, about 5 minutes. Let cool slightly. Spoon blueberry mixture on top of cooled cheesecake.

Valentine's Homemade Fudge Recipe

Get your Valentine's something nice, these delicious candies would make a great gift.
Conversation Heart Fudge Candies
Let this microwave fudge do the talking. The recipe's simple enough for older kids to make themselves and yields 64 bite-size pieces--plenty for a classroom party.

What you'll need

  • 1 1/4 cups semisweet chocolate chips
  • 1/2 cup sweetened condensed milk
  • Dash of salt
  • 1 1/4 cups white chocolate chips
  • 1/2 cup sweetened condensed milk
  • Dash of salt

  • Aluminum foil
  • 64 conversation hearts
  • 64 red foil bonbon cups or mini muffin cups
  • Clear or red cellophane wrap, cut into 64 5- by 6-inch rectangles
  • Sparkly pipe cleaners in red, pink, or silver

  1. Line an 8-inch square pan with aluminum foil. Set aside.
  2. In a medium-size, microwave-safe bowl, combine the dark chocolate layer ingredients. Microwave the mixture on high at 30-second intervals until the chocolate is melted (about a minute), stirring at each interval. When the mixture's smooth, use a spatula to spread it evenly into the prepared pan.
  3. In another medium-size microwave-safe bowl, combine the white chocolate layer ingredients. Repeat the melting process as described in step 2, but stir at 20-second intervals, as white chocolate tends to scorch easily. Spread the white chocolate evenly over the dark chocolate layer.
  4. While the fudge is still warm, use a knife to gently score it into 1-inch squares, then put a candy heart on top of each square.
  5. Chill the fudge uncovered in the refrigerator for at least 2 hours or until firm. Lift the foil to remove the fudge from the pan and place the whole hunk of fudge on a cutting board. Use a large knife (a parent's job) to cut apart the squares, then peel off the foil from the bottom.
  6. Place each fudge square into a foil bonbon cup or mini muffin cup. Center the cup on a cellophane square and wrap it as shown on page 53, using 1-inch pieces of pipe cleaner to secure the ends. Makes 64 bite-size pieces. Store at room temperature or in the refrigerator for added firmness.

Christmas Time at The Boardwalk Resort

One of the best times of Year to visit Walt Disney World is Christmas Time. My family and I are fortunate enough to live close and visit often but before that this time of year was our favorite. the decorations are amazing to say the least, the Cast Members do amazing job with details. And we love looking for Hidden Mickey's even in the Holiday decorations.

The Boardwalk resort located near Hollywood Studios is one of my favorites for Spectacular Decorations and Lucky for us it is our DVC Home Resort ~ If you get the chance to go around to some of the deluxe resorts, check out there Holiday Decor..
That is Donald Duck stuck in the chimney, we got a big laugh out of this display and coming to Disney stirs many feelings of joy, love and humor. Glad they can accomplish all that because there are some days I just need a laugh.

Love this Giant Gingerbread House and inside they were selling a kit to take home and make your own.

Long Lost Friends & Limited Time Magic at WDW

This week has been incredible. The "Limited Time Magic" that is going on at Walt Disney World has been amazing and fun. If you don't know what I mean here is the 411 : Now happening and continuing through 2013, Limited Time Magic will surprise and delight Guests in FUN and unexpected ways at Walt Disney World Resort and Disneyland Resort. New and exciting entertainment and imaginative events will pop up and then disappear. And this week's surprise was meeting The 3 Little Pigs, Big Bad Wolf and so many more long lost friends..

This week was called LONG LOST FRIENDS WEEK!!   and we were very lucky to be here for it. I got to see a whole bunch of characters, I hadn't seen in years. I remembered them from years ago and was so happy to get some pics with them. One more cool thing that we got were autograph cards with everyone's signature on it. No autographs were given to save on time, the lines were very long and they weren't out there for very long. So these cool cards were given to us and they make great keepsakes.

I got some really great pictures with Robin Hood, Prince John, Sheriff of Nottingham, Friar Tuck, Clarabelle Cow, Horace Horsecollar, Pinocchio, Jiminy Cricket , Geppetto, The 3 Little Pigs and The Big Bad Wolf. I think the Big Bad Wolf was my favorite - really fun times with them all, but the wolf was so bad, lol.

Thanks for stopping by and there is so much more Limited Time Magic News Coming!!

Have a Magical Day !!!

Le Cellier ~ New Lunch Menu

If you have never been to the restaurant located in the Canadian Pavilion in Epcot, you are missing out on one of the best dining experiences at Walt Disney World. Here is the just released lunch menu and it looks delicious. I can't wait to try the Spicy Chicken Sausage, Le Cellier House Burger and Maple Creme Brulee. Three new things, I have never tried there before and if it's anything like the other dishes (Cheddar Cheese Soup, Steaks) we had, it will be a delight to the palate.

It was a great experience to eat here and I'm so glad they have now include a lunch menu. This gives you a lot more chances to eat at this very busy, hard to get reservations restaurant. It was about 2 years ago that we took the whole family, all 12 of us to Disney and one of special dinners was eating here. We knew that in our planning of this trip when we listed all the dinner reservations we wanted, that this particular one at Le Cellier Steakhouse had to be made at least 3 months in advance. But knowing what I knew about it, we decided to make it 6 months before. I didn't want to take any chances not getting in and there were a lot of us.

The special dessert, so cool.

It was a great meal, we all ordered steak and it was so delicious, then for dessert the signature Moose Chocolate Cake. This was a hit with the kids, yes it looked just like a moose. Put this dinning experience at the top of your list. Keep in mind it is now (2) dining plan credits, back when I was there it was still one.

Thanks for stopping by ;-)
