Traveling the Culinary World at Food & Wine Festival 2013

This year I can't wait to go to the 2013 Epcot International Food & Wine Festival! With 25 different marketplaces to visit and get a sample of the each country's cuisine, for this foodie it's a great place to taste (and drink) around the world.

A little reminiscence from last year - 
Epcot ~ 2012 International Food and Wine Festival 

As we went around country to country at the International Food & Wine Festival this year, I have to say there was a lot to choose from. With 30 different booths to choose from and culinary classes too, this was the place for Food Lovers to be. I do consider each country with an open mind and I wanted to try many of the dishes I had read about including the Lobster and Seafood Fisherman's Pie in Ireland.  This combination of Seafood including one of my favorites "lobster". It was creamy and delicious. It was just the right size as were all of the dishes because, if you are going to travel the culinary world better eat small so you can try them all.

Another of my favorites was in Canada, where we tried the Famous Canadian Cheddar Cheese Soup. I had eaten at the Canadian Pavilion at "Le Cellier" before but, had never ordered this soup even though it was talked about being the best soup anyone had ever had. When the festival was coming around I put it on my list and I was not disappointed. It had the right amount of cheesy goodness not to over bearing yet, it was very creamy. It was a great choice.

Cheddar Cheese Soup ~ The most Amazing Soup !!

1/2 pound of bacon, cut into 1/4-inch pieces
1 medium red onion, cut into 1/4-inch pieces
3 celery ribs, cut into 1/4-inch pieces
4 tablespoons butter
1 cup all-purpose flour
3 cups chicken stock
4 cups milk
1 pound sharp white cheddar cheese, grated
1 tablespoon Tabasco sauce
1 tablespoon Worcestershire sauce
Coarse salt, freshly ground black pepper, to taste
1/2 cup pale ale, room temperature
Chopped scallions or chives, for garnish

1. Cook bacon in a 4- or 5-quart saucepan over medium-high heat, stirring frequently until lightly browned, about 5 minutes.
2. Add onion, celery and butter; sauté until the onion softens, about 5 minutes.
3. Reduce heat to medium. Add flour and stir constantly for about 4 minutes.
4. Whisk in chicken stock and bring to a boil for 1 minute. Reduce heat to medium-low and simmer for 15 minutes, stirring occasionally.
5. Add milk and continue to simmer for another 15 minutes. Do not boil after adding milk.
6. Remove from heat. Stir in cheese, Tabasco, Worcestershire, salt and pepper until cheese is melted and soup is smooth. Stir in ale. If soup is too thick, thin to desired consistency with warm milk.
7. Serve hot, garnished with scallions or chives. Makes 6 cups
