Delicious HeirloomTomato Salad at Flower & Garden Festival




I must admit out of all the dishes I tried over the weekend at Epcot's International Flower & Garden Festival - I loved this Tomato Salad. With all these different components blended together and all I could say was "I wanted more". Sometimes at this festival and Food and Wine in the Fall, the sizes of the dishes are way to small for me anyway. The Heirloom Tomatoes are special grown with different colors and flavors and that makes it taste even better. I complimented it with a Bass Ale, right next store at the United Kingdom Pavilion.


Tomatoes warmed by the sun, begging you to take a bite. Tidy beds of mixed herbs that look as good as they taste. Salads bursting with fresh-from-the-backyard flavor. These are just three reasons why we love the exciting new addition to the 2013 Epcot International Flower & Garden Festival, which runs through May 19. Gardening and eating are just two sides of the same delicious coin. Flowers are lovely, but few things are more rewarding than serving up a home-grown treat.

Throughout Epcot’s World Showcase, Guests can now try culinary creations and special libations inspired by the festival gardens, celebrating flavors from around the world. These tasty treats are only available during the Festival! Festival-goers can sample “frushi” – fruit sushi – at Hanami, or try a glass of carrot wine from Florida Fresh, sounds delish! Nearby Festival Farms gardens showcase some of the ingredients that go into these special treats. It’s the perfect way to get inspiration and ideas for home kitchen gardens – for a sample, we’ve included a festival recipe at the end of this post that will send you to homegrown tomato paradise. Thank you, that's 1 of my favorites at the festival.

Epcot Executive Chef Jens Dahlmann was instrumental in planning the new foodie elements in the festival. He explains, “We’ve tried for five years to find a way to bring a food element into the festival. The popularity of the Epcot International Food & Wine Festival has given our Guests an interest in growing their own food and edible landscaping. And everybody loves the food and wine on the promenade! So now you can look at the beautiful plants and flowers and enjoy the added sensory element of flavor. Plus, people often don’t know what produce looks like when it’s growing, and it’s great to educate the younger generation that not everything comes in a plastic bag.”

The autumn Epcot International Food & Wine Festival may have provided some inspiration, but Jens makes it clear that the Epcot International Flower & Garden Festival remains very much its own event. “We didn’t want to turn ‘flower and garden’ into ‘food and wine.’ The feel should be unique. None of the menu items have crossed over – all the items we’re serving, both food and beverage, are unique to this festival!”

He continues, “Our focus is really around springtime, the spring harvest, what produce is available at the time. And we wanted to highlight the lifestyle we enjoy this time of year – spending time outdoors, barbecuing. We brainstormed about how to bring out the diversity of cultures and the different ways they celebrate spring.” That’s why you’ll find seasonal dishes like a ratatouille packed with fresh veggies at L’Orangerie or spring pancakes with grilled chicken and green apple at Lotus House.

You’ll also find lots of good old American barbecue, because what’s spring without a cookout? “We have a huge bbq smoker where we do smoked brisket and pig shoulder. We also have a pork slider with a vinegary slaw, and brisket with collard greens and jalapeno cornbread. Plus there are great local beers to try — lots of good stuff!”

Chef Jens has some great advice for aspiring kitchen gardeners. “Know your local area – go to the local farmers’ market and see what they have. Whatever they have plentifully, that’s what you can grow well. Be aware of the seasons and when to plant. Start small — it could be a little herb garden, and then you could add peppers and chilies because they are easy to grow. Plant things that you know how to use – you can pickle your cucumbers or chilies. If you have a passion for cooking, then the sky’s the limit — but for most people peppers, lettuce, and cucumbers are a good place to start, because you can eat them raw and they’ll be delicious,” he recommends.
“People ask how do I know what’s in season? Just look at the supermarket and see what’s on sale! Usually the stuff that’s plentiful and cheapest is local and fresh. I’m European and we’re very aware of the seasons these – you wait all year for fresh asparagus or the first strawberries. You have to connect to your food, and gardening is a great way to do that.”
This year, when Guests stop to smell the flowers, they’ll also get a taste of the best spring has to offer. And for your own garden-fresh taste of spring, try whipping up the easy and delicious salad below — it’s just one of the yummy dishes on offer during the festival!


Heirloom Tomato Salad with Mozzarella

Serves 6


1 1/2 pounds mixed heirloom tomatoes
1/2 pound small fresh mozzarella balls, cut into 1/4-inch-thick slices
1/2 small red onion, very thinly sliced
1/2 cup baby basil leaves (may substitute regular basil leaves)
1/4 cup extra virgin olive oil
2 tablespoons ice wine vinegar*
Coarse salt and freshly ground black pepper, to taste


1. Wash tomatoes and remove cores. Slice larger tomatoes and quarter smaller ones. Place tomatoes on a large platter and drizzle with oil and vinegar, and sprinkle with salt and pepper. Set aside 3 to 5 minutes.
2. Divide tomatoes among serving plates. Top with mozzarella, onion, and basil. Drizzle oil and vinegar from platter over tomatoes and season to taste with additional salt and pepper.

*Ice wine vinegar can be found in specialty foods stores. You may substitute seasoned rice vinegar for a similar flavor.



I had this salad and it was absolutely delicious. The red onion was sweet and the tomatoes had great flavor. The dressing was very lite and the mozzarella cheese was creamy and an added yummy bonus.

Building A Light Saber - Fun for the Star Wars Fan

Over the weekend, we had a great time at Downtown Disney. After having a great dinner at the restaurant T-Rex, we went down to "Once Upon A Toy".  Now I have been in this store before of course, but I know it was some time ago. It had been years probably since, I had stopped in and bought a box of Mr. Potato Head parts. They have a huge selection of Disney themed hats, signs and accessories. They have everything there for your children's enjoyment and your's too. The walls, ceiling and displays have so much to look at from Hidden Mickeys to Murals of your favorite Movies. But that's not why we were there.



 I guess there comes a time in everyone's life to make yet another Star Wars Light Saber. Yes, this wasn't our first, nor our second either, so I asked my son a very dumb question, Do you really need another one? And as you probably guessed "YES"was the answer. Well since my hands were filled with bags, I instructed him he would be on his own creating this new masterpiece and that if all else failed there were step by step instructions he could follow numbered on the display. So, as he began building it, the excitement grew on his face. It was in the middle of building he then became unsure of how many pieces he could add on to the handle, because he wanted them all. We then asked a nice Disney Cast Member to help him. They are always delightful and were very knowledgeable, thank goodness, about the building of your personal lightsaber masterpiece.

When it was finished it looked really great.  It was a really exciting time and he had a blast building it from scratch. I really enjoyed watching the smile on his face because, what better reward for a parent and child than to do something you love.

Review of Oz The Great and Powerful DVC Preview!

We had the pleasure of seeing the soon to be released OZ ~ The Great and Powerful Movie over the weekend. It was a special showing for Disney Vacation Club members and their families. This is just one of the great reasons we love to belong to DVC; the perks are great! The showing was at Epcot in between United Kingdom and Canada at the World Showplace. It's a big convention style building with large rooms for movie showings and other special events.

When we entered, of course since the movie is not out yet, all our electronic devices were taken, phones, cameras, etc. But, I was in awe of the inside with it's great posters of the movie and the green glow for Emerald City, that came from the movie room. There were OZ t-shirts and glasses given away as prizes to trivia questions about the Movie and the Actors.

My family and I loved the movie! We got to see to it in 3D which made the effects more spectacular. It was visually stunning, the costumes that Oz, Theodora, Evanora and Glinda are wearing in the movie are beautiful. The special effects were incredible, it truly looked like a fairytale place and traveling on the yellow brick road was an adventure.  And not to give to much away, it has similarities to the original "Wizard of Oz" with the familiar places and the familiar characters but in many ways this new Oz has a lot of twists and new plots to it. I would call it more of a pre-quel, before Dorothy gets there.

I would definitely recommend this movie to everyone. It was about 2 1/2 hours long and it starts out as a black and white film which really through my kids for a loop, when I told them all movies when they were first made were in B & W.  I had been trying to figure out for weeks which one of the 3 witches was the wicked one (the green one) you see in some of the posters but couldn't really tell. That isn't revealed right away and I was surprised when it does happen.

It was a great addition to the movie event doing Trivia. It was before the movie was shown with Disney Cast Members and I really wanted that OZ T-shirt, lol.

And after it's release more than 2 weeks ago, it's been Number 1 at the Box Office. So Movie Goers don't forget to put it on your movie to see list

My Review of H2O+'s Sea Moss Replenishing Body Lotion Spray


Sea Moss Replenishing Body Lotion Spray  
This body lotion sprays on light as water but deeply hydrates and nourishes skin with Irish Moss, Water Lilly and pro vitamin B.
After using this product for a few weeks, I have to say that it is really great. My reasons are many, but when I select my skin care products one of the main things I need is a non-overpowering fragrance.  I think that's one of the reasons I was drawn to H2O Plus, because there's no strong perfume smell, just a clean ocean scent to their products. And that's exactly how I would describe "Sea Moss Replenishing Body Lotion Spray".  It also has a very light but sweet flower smell. I found that after my shower was the best time to spray it on because, it dried so quickly and felt very light, not greasy or heavy. It left my skin feeling very soft and like I just came out of a spa. One other thing I look for is products that help my skin. And this one contains an Anti-aging Marine Blend, that includes natural seaweed extracts to help repair visible signs of aging.  I would definitely recommended this product to everyone, especially busy moms who don't have a lot of time in the morning.

Irish Moss: A species of red algae which grows abundantly along the rocky parts of the Atlantic coast of Europe and North America. Rich in iodine and sulfur, Irish Moss is mainly composed of the polysaccharide carrageenan, 10% protein and about 15% mineral matter.

Entry for Disney Wine & Dine Half Marathon Weekend events are non-refundable.

Eligibility
Disney Wine & Dine Half Marathon
To compete, you must be 14 years of age or older.

Mickey's Jingle Jungle 5K
All ages are welcome to compete. Each participant must be able to complete the 5K on their own.

runDisney Kids' Races
Children 13 and under can participate in the One Mile Run and other race distances are determined by age group.

Pacing Requirements
  • 16-minute per mile pace for all athletes in the Disney Wine & Dine Half Marathon and Mickey's Jingle Jungle 5K.
  • Runners unable to maintain the pace may be picked up at any point along the course and transported to the finish.
  • A 15-minute per mile training pace is recommended.

Proof of Time
  • If you believe you will finish the Disney Wine & Dine Half Marathon in less than 2:45 hours, proof of time is required for start corral placement.
  • Please provide proof of time at the point of registration*. Include:
    • Name of Race
    • Year
    • Distance
    • Time finished
  • Proof of time must be provided from a race 10K or longer and must be from a race after July 1, 2011.
  • If you do not provide proof of time at point of registration but acquire it after you have registered, email the information to disneysports@trackshack.com before September 1, 2013. After September 1, 2013, you will need to bring proof of your estimated finish time to the Runner Relations booth at the Expo to have your start corral placement changed.
  • If you do not have a proof of time to submit, list "N/A" at the point of registration. If proof of time is not provided, you will be placed in the last start corral.

*For example, 2012 Walt Disney World® Marathon - 3:35 OR 2011 Disneyland® Half Marathon - 2:25

Minnie's St. Patrick's Day Candy Box

How to make it


  1. Print the template on regular paper or cardstock and cut out the pieces. Make all folds along dashed lines.
  2. Using either glue or double-sided tape, close Minnie's body by securing the tabs around her torso to their corresponding pieces.
  3. Close the bottom of the candy box by securing the B tabs, followed by the C tab.
  4. Fold each of Minnie's arms in half along the dashed line so the design is two-sided. Without sticking the tabs together, secure the two sides.
  5. Butterfly the tabs on Minnie's arms and secure them to the sides of her body.
  6. Fold the top dashed lines across Minnie's skirt toward you and fold the lower dashed lines away from you -- this will help her sit in place.

How to make it

  1. Print the template on regular paper or card stock and cut out the pieces
  2. Start by gluing the A tab on the front piece to the left-hand side of the back piece. Close the top of the hat by gluing the B tab to the left-hand side of the front piece.
  3. Tuck the C tabs on the top piece into the top of the hat and tape or glue them to the inside of the hat.
  4. Tuck the D tabs on the brim of the hat into the bottom of the top piece and glue or tape them to the inside of the hat. Line the brim up with the top piece so that the two dotted lines on the brim are on either side. These lines are where you will attach Mickey's ears.
  5. Fold and glue each ear piece in half so the design is two-sided.  Line the ears up on the dotted lines on the brim and glue the red tabs to the side of the hat and the green tab to the brim of the hat. Happy St. Patrick's Day!
